\n2 fogli di pasta sfoglia
\n5 carciofi
\nPrezzemolo fresco tritato
\n1 spicchio d’aglio
\n16 once di ricotta di latte intero
\n2 uova
\n2-3 cucchiai di Parmigiano grattugiato
\nSale
\nPulire i carciofi, togliendo le foglie esterne pi\u00f9 dure, parte del gambo e tagliare le punte.
\nTagliare i cuori di carciofo a met\u00e0, poi a fette e metterli in una ciotola con l’acqua e il succo di mezzo limone.
\nNel frattempo, in una padella grande, rosolare leggermente uno spicchio d’aglio, poi scolare i carciofi, aggiungerli alla padella e farli saltare a fuoco medio per un paio di minuti.
\nAbbassare il fuoco, salare, aggiungere un mestolo di brodo caldo e cuocere per circa 10 minuti, coprendo con un coperchio, fino a quando il liquido viene assorbito. Spegnere il fuoco e togliere lo spicchio d’aglio e aggiungere del prezzemolo fresco tritato.
\nIn una ciotola aggiungere la ricotta, il sale, il Parmigiano e le uova. Mescolate il tutto fino a formare un composto liscio e omogeneo, poi aggiungete i vostri carciofi cotti.
\nIo uso una teglia da 10 pollici, metto 1 foglio di pasta sfoglia sul fondo e riempio con il composto di ricotta e carciofi, poi copro con il secondo foglio di pasta sfoglia facendo delle strisce da mettere sopra.
\nCuocere in forno preriscaldato a 375\u00b0 per circa 45 min. fino a doratura, se inizia a dorarsi troppo, coprire con carta stagnola.
\nLasciate raffreddare 5 minuti.
